Producer Spotlight: Domaine Paul Pillot

Investing in Domaine Paul Pillot
Overview
In the golden slopes of Chassagne-Montrachet, where limestone and sunlight conspire to create some of Burgundy’s most thrilling white wines, Domaine Paul Pillot has been quietly refining its craft for four generations. Founded in 1900 and guided today by Thierry Pillot, the estate has become a benchmark for precision and purity in Chardonnay.
Thierry took the helm in the early 2000s, bringing a more restrained, terroir-focused style—harvesting earlier for vibrancy, reducing new oak, and letting the character of each vineyard shine. The domaine’s holdings read like a love letter to Chassagne: Les Grandes Ruchottes, Les Caillerets, La Romanée, alongside fine parcels in Saint-Aubin and Puligny-Montrachet.

The result is a portfolio of wines that hum with energy - aromatic, chiselled, and laced with minerality. Whether from village vineyards or prized premier crus, each bottle captures the quiet elegance of its origins, offering both immediate charm and the capacity to age gracefully for decades. For collectors and purists alike, Domaine Paul Pillot represents the essence of modern white Burgundy - vivid, authentic, and unforgettable.

Analyst Note - From Matthew Small (Head of Investment)
Paul Pillot is most celebrated for elegant, mineral-driven Chassagne-Montrachet whites, with Les Ruchottes often considered the jewel. However, it is the Chassagne-Montrachet La Romanée that has been the best performing label, with its index showing a 10-year annual CAGR of 24%. Despite the recent market correction, La Romanée has proven a source of stability, displaying a low beta of 0.33 and reasonable liquidity. Our top picks are the 2018 and 2019 vintages.
Dinner Party Story
Thierry Pillot didn’t just inherit great vineyards - he modernised the approach. When he took the reins in 2004, Thierry scaled back new oak, adopted smaller barrels (350 L), and focused on drawing out the precision and energy inherent in Chassagne terroirs. It’s his restraint, not flamboyance, that made his versions of these site-famous vineyards quietly stand out.
